The potential harm of hidden or unknown ingredients

You see the dish. Your allergy depends on everything inside it.

Same order. Different ingredients.

A meal you have eaten before can change. A different sausage supplier, a new sauce or an updated recipe can introduce an ingredient you need to avoid. Check the current information each time, and tell staff about your allergy.

A sausage is more than meat

Some sausages use wheat rusk or wheat starch. Heinz published an allergen update when its Beanz with Sausages recipe changed: the new version contained wheat, soya and sulphites. This is a documented recipe change, not a claim that all sausages contain wheat.

Wheat in a sausage. A child in hospital.

Anaphylaxis UK reported in May 2025 that nine-year-old Ralph needed hospital treatment after staff repeatedly said his sausages contained no wheat. Reassurance needs to come from checked ingredient information.

The sauce can change the dish

Some dressings and sauces contain fish, egg or mustard. Pesto can contain nuts and milk. A small spoonful still matters to someone with an allergy. Recipes vary, so check the actual product.

An unfamiliar name can hide a familiar allergen

Whey is derived from milk. Allergy UK explains why ingredient names and compound ingredients need careful reading. Allergies can also involve foods outside the 14 regulated allergens.

Before you order

  1. Check the ingredients, including sauces, coatings, dressings and garnishes.
  2. Tell staff exactly what you are allergic to. Ask about recipe changes and cross-contact.
  3. If the information is unclear, do not rely on how the dish looks or what you ate last time.

These examples raise awareness. They are not a complete ingredient or allergy guide. Wheat allergy and coeliac disease are different conditions.
